It would be nice when I install cmake-data that the greatest & latest
of cmake.vim override anything from my vim81 install.

Typically:

/usr/share/vim/vim81/syntax/cmake.vim ->
/usr/share/cmake-3.16/editors/vim/syntax/cmake.vim
/usr/share/vim/vim81/indent/cmake.vim ->
/usr/share/cmake-3.16/editors/vim/indent/cmake.vim

It seems that something smart is being done for emacs

$ grep editor cmake-data.install
usr/share/cmake-*/editors/emacs/cmake-mode.el  usr/share/emacs/site-lisp
