Due to security issues, PDF support was disabled on purpose in mat. You
might want to look into mat2, the successor of mat:

It's not available yet in Debian Stretch, but you can find it packaged
for Debian Buster: https://packages.debian.org/mat2. The package should
be installable on Debian Stretch without problems.

Mat2 brings improved PDF support: by default, it completely re-renders
the pages of a PDF - which unfortunately is the only reliable way to
remove all metadata from PDFs.

But there also is the '--lightweight' commandline option which keeps the
text structure but in turn might not remove *all* metadata.
