Actually GNU Health version 1.8.0 is already packaged in Debian
Experimental. Since it depends on Tryton 1.6, we're waiting for that
version to migrate to Debian Sid (unstable) before being able to move
GNU Health there.

You can install the Debian package by adding the experimental
repositories (reminder: not good for production use yet!):
Add the following line to your /etc/apt/sources.list
deb http://ftp.debian.org/debian experimental main

Then run these 2 commands:
$ sudo aptitude update
$ sudo aptitude -t experimental install gnuhealth

The 1.8.0-1 package in Debian experimental is in no way finished: it
now supposes that the user will execute the steps to create a database
user, etc. manually. I'm currently working on packaging 1.8.1 in
Experimental and having more of those steps automated. See [0] for a
non-definitive list of tasks we still have to work on.

Please try package 1.8.0-1 out, and let us know what you think is still missing!
FYI the steps to perform are listed in README.Debian (in
/usr/share/gnuhealth I believe) once you have installed the package on
your system.
