Do you mean sbuild? Yes. You pass --host=somearch and that's it. With
pbuilder, the option is called --host-arch. And if you really do want to
use schroot and dpkg-buildpackage directly, it's --host-arch there, but
you should also pass --build-profiles=cross,nocheck and
DEB_BUILD_OPTIONS=nocheck.
