Ideally, gnuplot-data is built in a separate arch:all build on
an amd64 (or so) buildd and therefore without the profile.

I think you could just add a check to override_dh_auto_build-indep
that the nox-only profile is not active, and fail the build if it
is, to ensure that the profile is only used in binary-arch builds.
