This looks like https://github.com/xarray-contrib/pint-xarray/issues/360 
(Antonio, should this bug's forwarded URL be updated to that?).  Since 
it's due to something that was explicitly flagged as an intentional 
breaking change in xarray 2025.11.0, I believe it should be fixed in 
pint-xarray.
