There was a pretty huge lack of interest in NUT on OS on our mailing lists until your email came in :-)

The short answer is that there is no easy way to make NUT talk to a USB UPS on OS X the same way as on Linux or *BSD.

So if you can't beat 'em, join 'em. I started looking at a way for NUT to communicate with the OS X UPS manager, but that API is a bit of a mess as well. It seems possible, but complicated to code up. If it works, it should be simple for end users to install, but I won't have much time to devote to coding that until much later this year.

Your best bet might be to configure the Mac to be a client to NUT on the NAS. Suspending the VM is going to depend on what virtualization software you are using, but there is a beta of a Windows NUT client on networkupstools.org if you want to go that route.
