I have implemented something similar: I sync "All Mail" only every hour,
while I sync INBOXes every 3 minutes.  This is done via a cronjob that
checks for the last execution of the full sync.  The 'only INBOX' run is
done with the "-f" option of offlineimap.

My howto is slightly outdated, but it should still give you the idea:
