Well because Unity is still supported to some degree in Ubuntu and
because evolution is a popular app, I'd rather not disable the Unity
feature in evolution now. Maybe I'll change my mind later.

I don't think there is a good way to have a Build-Depends that only
exists in Ubuntu but keep the packaging in sync with Debian. I wish
there were, since it could help with the maintenance of several
packages.
