It was due a FBFS issue related to a broken cmake macro used by KiCad.

Exactly.
If you want to use the KiCad 5 package from unstable you can just
install them. Once DAK (the Debian Archive Kit) is happy to migrate the
packages to testing they will get be able to install from there.
Currently awaiting some needed action by the ftp-masters to remove the
old cruft packages in testing, requested by #901435 as Geert already
mentioned.
