I would prefer to have some automatic method for correctly HELOing, as
your suggested change doesn't work well with multi-homed hosts and not
at all with hosts that dynamically change their IP address.

That automatism is not yet possible, the required expansion variable
is on upstream's wishlist (item 164).

In the mean time, I'd like to suggest that you manually set the
helo_data option on the SMTP transport. It is not possible to have
every aspect configured via debconf, and the MTA configuration is
already way too complicated.
