It's a deal. I'm sold. OK, how does one start using Maildir on Debian?

"2.1.1.11. Delivery method for local mail" doesn't say how.

man update-exim4.conf says use
dc_localdelivery='maildir_home'
which I did and ran update-exim4.conf
but mail still goes to /var/mail/$USER.
(I don't run a daemon.)
