Please don't do that. It's ridiculously easy to forge "From" addresses, 
and you'll have a system open for spammers to use.

A viable solution would be to require your travelling users to 
authenticate themselves (using the mechanisms available in SMTP), and 
allow relaying from authenticated users. This is the default setup in 
Debian, you just need to set an authentication database. I believe there 
are some examples in the configuration file; the whole story is found in 
chapters 33 onwards in the Exim documentation[0].
