I don't think your problem is going to be fixed by changing your exim 
config.  It works with Thunderbird, so *should* work with Outlook.

In Outlook go to Tools->Email Accounts...

This will bring up Outlooks Email Account configuration wizard.  Select 
change or edit existing email account.  highlight the account for your 
imap server and click the change button.  Then click the "More settings" 
button. A new window will open that has a tab for outgoing server 
settings.  You'll have to adjust these settings to get outlook to 
cooperate with your mail server configuration.
