You can do this with 
# ps -elf | grep [s]pam
and there is no need for 'grep -v grep'
I don't have the answers but if it were my server I would investigate
the logs of both clam and spamassassin to see whether there are any
problems.
Also restart your exim and see whether this happens again.
On the other hand if it does not burden your server to have a few idle
exim daemons on it, just ignore it.
