The perfect is the enemy of the good!
I really believe that the current cantarell-fonts package in SVN is in
good, though not perfect, shape for Debian unstable (or at least
experimental). It really improves the visual appearance of the parts
of GNOME3 that are currently available in experimental. It would be a
shame if details like upstream's git tree structure would keep us from
providing this font.
And regarding the package name question, especially the foundry part,
we provide GNOME's version of the font, maintained and released by
GNOME, so IMHO the package name should reflect this. Both the initial
author and the current maintainer of the font agreed on this question.
So what else should keep this package out of Debian?
