I am using GNOME 3, too, and have sessions running for a lot longer
than 3 or 4 hours and have never seen the effect that you have captured
in the screenshot.

Does changing it to another font and then back to Cantarell Regular fix
the issue? What font size have you set (check with gnome-tweak-tool)
and does rendering text in Cantarell Regular in this font size in other
applications (e.g. Libreoffice Writer) cause the same defects? Could
you please install the libpango1.0-dev package and run the following
when this isue comes up again?

pango-view --font=Cantarell --text=Screenshot --waterfall
