Well actually, I think I reported this problem in the wrong place... it
is probably not a bug with libgnomevfs2-0.

Please close this bug.

For the records, now that nautilus and gnome-control-center have been
updated, I can now add a new application (xpdf) in nautilus acting on a
PDF file with the "open with other application" dialog, as described in
: http://www.gnome.org/start/2.8/notes/rnwhatsnew.html

And it's taken into account in evolution next time it is restarted.

Hope this help others who would have the same problem.
