 FYI, some users have requested that to the upstream, but while the
 problem is simple, the solution isn't: GtkTextView (the Gtk widget
 responsible of displaying the text window of gedit) does not support
 changing text color right now.

 A gedit patch has been discussed to workaround the limitation, but it
 is not completely acceptable right now.  You probably will have to wait
 until the next version of Gtk supporting changing cursor color comes
 out.

 I've linked the two bugs.
