You reported with version "0.6.1-2" and said you grabbed it from
unstable, but unstable has version 2.10.1-2 for your arch.

I started sound-juicer from a fresh sarge, it didn't complaint about
any missing dependencies. I dist-upgraded to testing, I could run it
again, with no complaint from relocation what's so ever.

It could be that your system is a complete mess, see below.

Your system is completely messed up. Really. I can't imagine you've
been keeping up-to-date to anything on your system.
The worse is that you probably have indeed found a missing dependency
somewhere (I presume it's libgstreamer-gconf0.8-0 which should have
stricter shlibs), but it's almost untrackable in such a mess.
Please send the output of:
ldd `which sound-juicer`
ldd -r `which sound-juicer`
ldd `which sound-juicer`
ls /usr/local/lib
