Well, Ephy and Firefox are web browsers.

Thunderbird is a MUA and little more.
Evolution is a calendar, MUA, news reader, agenda, contacts book that is
shared with other GNOME apps. The amount of integration there is in
evolution with the rest of the desktop is a lot bigger than in the
ephy/ff case.
