Evolution 2.10 seems to include a scalable icon;
$ dpkg -L evolution-common | grep svg
/usr/share/icons/hicolor/scalable/apps/evolution.svg
But you're right about it picking the xpm file, I see this for a lot of
other applications too, such as totem and sound-juicer.
