Right, which is not really an icon theme bug (a KDE theme has no reason
to use gnome). The GTK package had a patch to made gnome always being
used, it has been dropped with an upgrade because upstream made changes
on how it's handled. Changing GTK might not be the right way though, if
the icons are stock ones it might be that the icon theme lacks them and
evolution should install specific icons it needs to hicolor
