Copying a text containing non-ASCII characters results in those characters being
omitted from the copy action. Pasting in another application afterwards proves
this; those characters are just missing.

Have a look at the example PDF containing the German word "Mühle" (mill).
Copying and pasting results in "Mhle". I tested this for some other characters
too and it seems that Evince cannot handle Unicode here.
