Hi,

You're right, I don't get the lpr option either, not in evince, and not
in gtk-demo or any application.

The lpr backend is built and shipped by default,
in /usr/lib/gtk-2.0/2.10.0/printbackends/libprintbackend-lpr.so so I'm
guessing this is a GTK+ bug. 

Somebody from the pkg-gnome team will need to confirm this.
