Could you please run it with gdb?

gdb --args update-mime-database /usr/share/mime

And then when the segfault happens do
thread apply all bt full

You need to have libc6-dbg, libxml2-dbg and libglib2.0-dbg
installed. Also a shared-mime-info build with
DEB_BUILD_OPTS=nostrip would help much...
