More info. I noticed that

rc  locales        2.6.1-6        GNU C Library: National Language (locale) da
ii  locales-all    2.7-1          GNU C Library: Precompiled locale data

So I tried removing -all and re-installing locales:

Installing new version of config file /etc/locale.alias ...

At this point, gnome-panel crashed.

ANKH:~# dpkg-reconfigure locales
Generating locales (this might take a while)...
  en_GB.UTF-8... done
Generation complete.

I logged out and in again to ensure all was well. Alas it
it still convinced that tuesday is the start-day. My locale
output again, just for good measure:
