Hi,

I just tried ripping a song as mp3 and it works fine, Rhythmbox and
other applications can read the meta data with no problem.

What version of gstreamer0.10-lame and gnome-media-common are
installed? 

What is the pipeline used to encode the mp3? 
Try "gconftool-2 -g /system/gstreamer/0.10/audio/profiles/mp3/pipeline" 
If you have created your own audio profile for mp3, substitute it in the
example above.
