I'm experiencing the same thing.

Fresh install of Testing (Lenny) (2008-11-03) on a laptop 
only using the internal lcd.  Using a ~/fonts.conf disabling 
sub-pixel redering, hinting, and bitmap fonts 
(from /etc/fonts/conf.avail/ 10-no-sub-pixel.conf, 
10-unhinted.conf, 70-no-bitmaps.conf).

With a non-gtk app, like 'xterm -fa monospace', fonts act as 
configured.

With a gtk app, like iceweasel, the no hinting or bitmaps 
seems to be respected, but the no sub-pixel rendering 
request is ignored.
