That is just sick :-D but you found the problem

gvfs was not installed, but why should it? why does evince need gvfs to
open an url in a pdf document?

I installed gvfs and the urls in the document started working....

$ sudo apt-get install gvfs

$ dpkg -l | grep gvfs
ii  gvfs                                 1.0.3-3
ii  libgvfscommon0                       1.0.3-3

Any information about this dependency would be helpful, i still consider
this a bug, (xpdf can open links without gvfs)
