I disagree. I can imagine users having more than one dictionary opened, maybe to
look at various words simultaneously or to compare results. Since there's no
technical requirement to forbid multiple instances, I don't think this is a good
idea.
Having this optional in preferences doesn't sound worth it either. But if you
feel strong about this, feel free to send it to bugzilla.gnome.org
