Bug#601743: /usr/bin/gnome-open: gnome-open man page doesn't say how to change what programs are used to open files

"man gnome-open" says it opens thing using the GNOME file handlers,
but does not say what those are, or how to see them or
(importantly) edit them.
If that's not reason enough, please consider:
Google reveals lots of people asking about this, and conflicting
answers, only some of which work at all. And _None_ of which
enabled me to open .avi files with mplayer (despite "xdg-mime query
default video/x-msvideo" printing "mplayer.desktop", and gnome-open
successfully opening other video types with mplayer). If
gnome-open's documentation said how it was supposed to be
configured, I could tell if this is a bug, or if I'm just reading
inaccurate/outdated tutorials.
