Ok, I expected that.

TBH I'm a bit at a loss here.
What happens if you add a line
application/pdf=evince.desktop
to the [Default Applications] section in
.local/share/applications/mimeapps.list
Could you also dump the environment when executing xdg-open.
I.e. add a call to "env" somewhere in /usr/bin/xdg-open and redirect
that to a file.
An strace of gvfs-open might be helpful, too.
