gdm3 3.4.1-7 or -8 haven't changed anything related to loading fallback or not.
I suspect this is completely unrelated to the upgrade of gdm3 and you only see
it now because you haven't rebooted in a long time. Try downgrading to gdm3
3.4.1-6 (you can get the packages from snapshot.debian.org) and see if this
still happens.
