Although there's no GUI to get that changed, you can set a variable named
PRETTY_HOSTNAME in /etc/machine-info (this file most likely won't exist) to set
the bluetooth device's name.
This file is part of a freedesktop tool named hostnamectl, I discovered it
while playing with Fedora 18. Didn't get a clue from Debian. Guess it hasn't
landed here yet.
