Needless to say, that this workaround is pretty ugly.
An alternative could be to disable the gtk-doc build (temporarily) and
ship the upstream provided doc files.
That in turn would mean, the package fails to build twice in a row (as
clean will remove the pre-generated docs).

Anyway, let's see if upstream has an idea.
