Thanks, removing gnome-icon-theme-symbolic and having
adwaita-icon-theme Provide it seems easily doable for stretch.

To remove gnome-icon-theme, we need to at least revert and fix

Otherwise, maybe we need to set adwaita-icon-theme to Inherits:gnome
and install gnome-icon-theme since so many packages use deprecated
icon names.
