I can confirm that issue.
echo "foo" > bar.txt
gio open bar.txt

only yields the following log message in the journal:

Sep 28 17:44:40 pluto dbus-daemon[1441]: Activating service
name='org.gnome.gedit'
Sep 28 17:44:40 pluto dbus-daemon[1441]: Successfully activated service
'org.gnome.gedit'

gedit is not actually started.
