After upgrading to gnome-shell/3.26.2-3 and gjs/1.50.2-3 you should
find that whenever you would previously have experienced a crash (and
perhaps a lot more often), you now get a JavaScript stack trace in the
systemd journal. It'll look something like the one I reported in
<https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=887082>. Please report
these stack traces as new bug reports, and make sure to include details
of any Shell extensions that you have enabled, either from
gnome-shell-extensions ("GNOME Classic") or separate packages.

Unfortunately this is, as you suspected, not very useful (it basically
says "some unknown JavaScript set the text property of an invalid
StLabel"), but the JavaScript-level stack traces should hopefully tell
us *which* JavaScript in enough detail to find the root cause.
