I tried again.

* Set Left Super as the Compose key

* $ gsettings get org.gnome.desktop.input-sources xkb-options
   ['compose:lwin']

* Disabled the Compose Key control

* $ gsettings get org.gnome.desktop.input-sources xkb-options
   @as []

* Logged out and logged in again

* $ gsettings get org.gnome.desktop.input-sources xkb-options
   @as []

So what is it on your system which causes 'compose:lwin' to be set 
behind the scenes? Since I can't reproduce the issue, I doubt it is 
gnome-control-center.

Probably we should wait for somebody else to do the above steps. In the 
meantime I dropped the forwarding of this bug, so people don't think 
it's being handled upstream, and since I'm pretty sure that the issue is 
not related to that merge request.
