I copied the 21 DVDs from testing into disk.
* What exactly did you do (or not do) that was effective (or
ineffective)?
I started from the menu invocation. Brasero accurately detected the DVD and suggested a file name. I could not navigate to the desired directory, by the way. The copy completed and I used the .iso without problems later. I removed the DVD (in various methods, including the Brasero menu action), inserted another DVD (again in sundry ways, waiting until after selecting the DVD->disk copy function again did not cause a crash immediately) and clicked on Disk Copy again crashed Brasero. The copy completed once, although Brasero did not show the final dialog which would allow returning to the main dialog, so I had to kill Brasero then.
I switched to the command line and the manual page indicates "copy=PATH". I looked for a more complete explanation before trying first, the output desired path, then /media/cdrom, then /dev/sr0, which Brasero accepted. Brasero also quits back to the shell, so there is no clear way to try for a second copy that way.
At least four of the copies stalled. Brasero simply kept trying without a timeout. At least two of these DVDs showed no artifacts impeding burning or reading. In each case I cleaned the DVD and burned it again (using Brasero on buster). Since my goal was to ensure the copies completed accurately, I count it as a success.

Brasero crashes when asked to copy a second DVD to disk in a single session.

I expect that the copy function should work until the user closes the application.
