Sorry, I got a bit confused since my local Git copy showed 46 Beta ^^
I poked it a bit and it looks like
https://gitlab.gnome.org/GNOME/gnome-software/-/merge_requests/1862
fixes the issue completely for me and OS applications show up again.
So, this would be a MIME detection issue, unless it's a combination of
separate problems that we are dealing with.
