GNOME abandoned gnome-icon-theme years ago, before GNOME moved to
https://gitlab.gnome.org/

There is no upstream maintainer which means nowhere to submit bug
reports, bug fixes, merge requests or translations updates.

We should look into removing gnome-icon-theme from Debian. It's too
late to do this for trixie but it could be done for forky.
adwaita-icon-theme is a partial substitute and is maintained but it
does not have all the icons that gnome-icon-theme did. There is
adwaita-icon-theme-legacy but it may be missing icons too.
