Bug#1095289: evince: Avoid packaging 48

Please don't package evince 48 Alpha. It includes an API bump which is
disruptive for projects using the evince libraries. It makes more
sense as a developer snapshot on the way to a gtk4 release which
hasn't happened yet and won't happen in time for GNOME 48.
