Ubuntu never renamed chromium-browser to chromium. The
gnome-browser-connector packaging is shared between Debian and Ubuntu.
Specifically, debian/control has

Suggests: chromium | chromium-browser, firefox
Enhances: chromium, chromium-browser, firefox

The first alternative package for Depends and Recommends needs to be
in Debian main according to Debian Policy § 2.2.1, but this doesn't
apply to Suggests.

However, I did update Ubuntu's chromium-browser packaging last year to
add Provides: chromium, so I guess I might as well simplify the
packaging as you suggested now.

Thank you,
