I managed to reproduce this part of your bug report on a squeeze
system after purging+reinstalling the GNUstep stack.

As the art backend relies on .nfont packages (aka bundles) which are
generated in postinst with the Defoma gnustep-nfont script, and Debian
font packages started to agressively drop defoma use, the script now
generates only a tiny fraction of the available fonts.

This should be fixed in the version of gnustep-back in experimental,
which is defoma-free and generates them with the help of mknfonts.tool
based on the output of fc-list.  (Uploading -gui and -back to unstable
is pending permission from the release team.)
