The symlink was previously created in the postgis debian/rules to keep
the jar available under its old name, and the symlink is indeed no
longer created by the new postgis-java packaging.

The path to postgis.jar is set in package/config/plexus.conf by a patch
in osmosis, I've just updated it to the new name.

A new osmosis revision including this change will be uploaded to
unstable soon.
