I think the appropiate place for that would be update-grub's --help output.
This would (I expect) automatically add the info to update-grub's manpage.

If you have time, could you try sending a patch for that in upstream?

This will be reconverted automatically when I have a minute to review the
patch that was sent.

I don't remember about these two, but note that not all variables are meant
to be user-editted.
