Sorry, but it's outside the scope of GRUB to document Linux boot parameters.

The documentation you want is most likely in initramfs-tools, so I'm moving
this bug there, with the understanding that the maintainers will close it if
it's already present, or otherwise add a note about root=UUID=xxx boot
parameter if it's missing.
