I'm not really sure how this is happening, but I normally
have "default saved" and "savedefault" for my kernels.
Every now and then (I haven't managed to line this
behaviour up with any particular activity, e.g. package
upgrades or whatnot) the option is dropped from the kernel
stanzas, and I must re-edit menu.lst and change the
savedefault line again.
